Coxinha – Deep Fried Goodness
Coxinhas are a Brazilian street food that are so delicious you will find yourself making them over and over again.
So, what are Coxinhas, you ask? Well, “Coxinha de Frango (Brazilian Chicken Fritters), also known as Coxinha de Galinha, consist of a dough made with wheat flour and chicken broth, which is filled with spiced chicken meat, shaped into a chicken little drumstick, and deep-fried.”
I personally like serving these little golden morsels hot, three to a plate, with Chipotle sauce, as a prelude for early arrivals to a dinner or garden party.
I use my VonShef Deep Fryer for these wonderful appetizers and my soup and salad dishes to serve them in.
The Recipe for Coxinhas
I have tried several versions of Coxinha and I really like the recipe I have included. So enjoy the video from Allrecipes, then give them a try. You will be happy that you did. So will your family and friends.
Just A Note
There are several people in my very large, extended family, and two very close friends, who do not like cooked onions. So, when preparing this dish for a dinner party, or an event where a large amount of guests are expected, I have two separate batches of the chicken filler prepared. In one bowl, I prepare the filling as in the video below, with the onions. In a second bowl, instead of the onions, I use finely chopped celery. My sister in law also adds shredded carrots to her version. (She’s one who doesn’t like cooked onions so she too uses celery and the carrotts. It’s very good that way, just not authentic, I think. But no one seems to mind.) And I also deep fry the non onion batches first and the ones with the onions last. Set them on two different serving trays and label the ones that have the onions. Any way you make them, your guests will love them!
