Finger foods are the best! I have been absolutely mesmerized by all of the horderve recipes and finger food ideas that swim around the world wide web these days.  I have used a lot of them and I have to admit that several have found there way onto every party table that I have recently create.

Cherry Tomato and Cucumber Bites just happens to be one of those finger foods that I simply fell in love with. They are fun to make and so delicious that your guests will simply devour them! (And then ask for more)

Here’s The Recipe For My Version Of Cherry Tomato and Cucumber Bites

Cherry Tomato and Cucumber BitesLet’s start with the cucumber and dill spread. You will need:

3 ounces of room temperature cream cheese
2 tablespoons miracle whip. (you can use mayonnaise if you prefer)
1/4 cup finely chopped cucumbers, seeds removed.
1 finely chopped green onion, greens as well as the bulb
1/4 teaspoon dried dill weed
1 radish, washed, skin left on, chopped finely
(Make all of your chops very small and the same size. This will create a beautiful spread!)
In a mixing bowl combine all of the ingredients to create your cucumber and dill spread!
Great! Next you will need a sleeve of Ritz crackers and a few cucumbers sliced thin. (You can slice these to the thickness you like. You will be laying them on the cracker, so slice a few and determine the thickness you like.)
Cherry Tomato and Cucumber BitesStart by putting a dab of your spread on each cracker. Next, place a slice of cucumber on top of the spread, pushing down gently, causing your cucumber to secure. Atop each cucumber slice place another dollop of the spread.
Slice cherry tomatoes ( I use my Refrigerator Pickled Cherry Tomatoes for this recipe) and place one on each cracker to top off your perfect horderve!
My sister – in – law skips the Ritz Cracker. She slices her cucumbers about 1/4 inch thick, tops with the dill spread and tops with the cherry tomatoes, chopped very very small! Either way, they both dress a table up beautifully and are delicious however you chose to serve them.
My mom, on the other hand, serves this spread in a lettuce leaf roll up with sliced Refrigerator Pickled Cherry Tomatoes while my oldest sister chops her cherry tomatoes right into the spread and uses it as a dip with club crackers!
So give this happy finger food a try! Your friends and family will thank you a hundred times over! Enjoy!
By the way, this spread is great on gyros!
